1 oz. White rum
½ oz. Watermelon puree
½ oz. Club soda
4-5 Fresh mint leaves
2 Tablespoons simple syrup
3 Tablespoons fresh lime juice
Mint sprig
Lime wedge
In a cocktail shaker, combine mint leaves, simple syrup and lime juice, muddle. Add rum and watermelon puree, stir to combine. Fill highball glass with crushed ice. Strain cocktail into glass, top off with club soda. Garnish cocktail with mint sprig and lime wedge.
