The largest selection of vermouth in the U.S. can now be found at Rosevale Cocktail Room in New York’s Civilian hotel. The vermouth program, launched in September, includes more than 150 different options of the aromatized wine within five different styles (plus sub-styles) to explore based on their sweetness level, aromatic complexity and country of origin.
Rosevale presents the vermouth program’s menu in a book that includes details about the origins of vermouth and how it’s made, the different pioneers of vermouth styles and the vermouth flights offered. The flights, named The Founding Fathers, World Tour, Giro D’Italia, Tour de France, Vuelta a España, Vermouth di Torino Rosso, Old World vs. New World, and Amato & Chinato, are priced from $30 to $35 for 1-oz. pours of four different vermouths. Each style of vermouth in the flight is also paired with savory and sweet food items.
The Civilian opened in late 2021 in Manhattan’s theater district; Rosevale Cocktail Room is located above the hotel’s Rosevale Kitchen restaurant. In addition to the vermouth program, Rosevale Cocktail Room offers an extensive list of specialty cocktails and handcrafted drinks lead by master mixologist Francesco LaFranconi.
