Royal Boucherie, a neighborhood restaurant and bar in Philadelphia, in November unveiled a create-your-own Old Fashioned bar. The brainchild of bar manager Eden Beschen, the personalized menu format allows guests to explore a variety of different flavor profiles to create their ideal Old Fashioneds.
The first step is choosing a base spirit from bourbon, rye, agave, rum, Scotch and gin. Brand options include (but are not limited to) Angel’s Envy, Michter’s, Dad’s Hat, Derrumbes Mezcal, Cascahuin tequila, La Gritona Reposado, Mi Casa Añejo, Rhum JM, Bluecoat Barrel Finished gin and Saint Luna Moonshine.
Next, guests choose their flavor of bitters. Royal Boucherie’s selection includes Angostura, black walnut, celery, cherry, chocolate, creole, grapefruit, hibiscus, lavender, lemon, molasses, mole, mission fig and fennel, orange, peach, Peychaud’s, plum, rhubarb and Thai green chili. The last step is a sweetener, with choices including agave, cinnamon, Demerara, ginger, hibiscus, honey, maple syrup, mint, rosemary, simple syrup, strawberry and vanilla.
In addition to the build-your-own Old Fashioned bar, Royal Boucherie has also refreshed its beverage program with new specialty cocktails and several temperance cocktails, as well as non-alcoholic wine and beer. Highlights include Franklin’s Mistress, a clarified milk punch crafted using a “Royal Rum Blend” (white rum, spiced rum and rhum Agricole), Meletti Amaro, pineapple and cinnamon; Pomme De Replay, with apple-infused Tito’s Vodka, Shady Knoll Pommeau, Cocchi Rosa and green Chartreuse; and Smokeshow composed of Banhez mezcal, melon liqueur and Thai green chili.
