Mexican restaurants may be better know for Margaritas and other tequila-based beverages, but Pancho’s in Las Vegas is offering a trio of fruit-flavored vodka coolers this summer. Created by mixologist Jaisyn Watkins, the coolers are priced at $11 each. Here’s what’s in them:
Blueberry Lemon, made with Stoli blueberry vodka, fresh lemonade, soda water, organic Meyer lemon simple syrup, garnished with lemon and blueberries.
Peach Ginger, made with Stoli peach vodka, peach schnapps, house-made lemonade, organic simple syrup prepared with peach, ginger and mint and garnished with a peach.
Raspberry Vanilla, made with Stoli raspberry vodka, organic simple syrup prepared with confectioner’s sugar, raspberry and Kentucky bourbon vanilla, mixed with soda water and fresh lemonade and garnished with raspberries.
Launched in June, the cooler cocktails have been a hit with guests, says Pancho’s manager Adam Lawrence. “We’re extending them past the official end of summer and throughout the rest of September,” he notes. “We will definitely be bringing the trio back next year!”
