Five Tips to Spiff Up Your Garnishes

When it comes to cocktail garnishes, bartenders tend to reach for the basics–the lemon wedge, lime wheel or orange peel. �But most people don�t use citrus to its maximum� when making garnishes, says M�t� Hartai, beverage director of The Libertine bar in Dallas.
In his session �Sexxy Dranks� at the San Antonio Cocktail Conference on Jan. 18, Hartai explained how the right techniques and tools can help you make the most of even simple garnishes. These are a few of his garnish tips.
Mixing The Grain and The Grape

Wine cocktails have evolved considerably beyond the Mimosa and the Kir Royale, thanks in part to the current interest in mixology. Wine has a broad range of flavors and can bring “an excellent sense of terroir” to some cocktails, according to one bar manager.
Success with wine cocktails starts by creating a truly balanced drink, educating consumers on the nuances of the flavors and pairing these libations to showcase their unique tastes. Here’s what some operators are doing with them.
1 � oz. Silver Tanduay Asian rum
1 � oz. Tart cherry juice
� oz. Lemongrass simple syrup
Ginger ale
Combine rum, cherry juice and simple syrup in a mixing glass with ice and shake well. Pour into a rocks glass with fresh ice and top with ginger ale; garnish with a cherry.

� oz. Ciroc Amaretto vodka
� oz. Ciroc Peach vodka
1� oz. Ginger ale
� oz. Orange juice
