I’m just into mezcal and tequila this fall, whether it’s in a cocktail or a “shot and beer” combo. At JIMMY I’m currently doing a throw back to 10 years ago. I’ve revived some of my favorite cocktails served over the years, including one called the Mexican Honey Bee. The mezcal mixes well with sweet honey, chamomile and lemon. I also enjoy just doing a mezcal shot something like Ilegal or Banhez with a tiny splash of Montenegro Amaro and a nice Modelo Negra beer or a Victoria beer…perfect.

Mexican Honey Bee
2 oz. Montelobos Mezcal
¾ oz. Chamomile
½ oz. Honey
¾ oz. Lemon
Combine ingredients in a tin and shake. Strain into rocks glass with cubed ice, garnish with a lemon wheel and honey comb.
