1 ½ oz. Gray Whale gin
1 ½ oz. Pear purée
¼ oz. Ginger liqueur
1 oz. Freshly squeezed lemon juice
½ tsp. Allspice dram
Combine ingredients and shake with ice. Strain into Collins glass with ice. Top with 2-3 dashes Angostura bitters and soda water. Garnish with fresh safe and a sliced pear.
