Ingredients

  • 1 ½ oz. Caravedo pisco
  • ½ oz. Kimo Sabe mezcal
  • ½ oz. Ube syrup
  • ½ oz. Lemon
  • 2 oz. Egg white

Instructions

  • Combine ingredients in a mixing tin.
  • Shake and strain into a coupe glass.
  • Garnish with lavender seeds and Creole bitters.

Notes

For Ube syrup:
500 g. White sugar
500 g. Water
1 oz. Ube extract
1 tsp. Vanilla extract
Add everything to a small pot and place over medium heat.
Bring to a soft boil, whisking together continuously until all the sugar has dissolved.
Remove from heat and strain through a chinois.
