For Blueberry-thyme simple syrup: Add 1 pint blueberries, 1 cup water and 1 cup sugar to a saucepan, then begin mashing the blueberries. Cover over high heat until it begins to bubble and boil. Remove from heat and add 1 handful of fresh thyme. Let infuse for at least 15 minutes. Remove thyme and strain the mixture through a fine-mesh strainer. Store syrup in the refrigerator for up to 10 days.
