8 Sparkling Cocktails To Ring In 2021

The Roarin' 20s

Most of us won’t be too sad to see the end of 2020. Holiday celebrations may be smaller and more subdued this year but some festive sparkling cocktails can help raise spirits. Here are eight recipes that we like; cheers to 2021!

The Roarin’ 20s
(shown atop)
1 ½ parts Courvoisier VSOP Cognac
1 part Dolin Dry vermouth
¾ parts Campari
Top with Champagne

Build in glass (Collins or wine), add ice and top with Champagne. Garnish with an orange slice.

Jingle Bell Fizz
Jingle Bell Fizz

The Jingle Bell Fizz
1 oz. Aberfeldy 12 Years Old Single Malt Scotch whisky
1 oz. Unfiltered apple juice
½ oz. Lemon juice
½ oz. Cinnamon syrup
Sparkling wine (to top)

Add Scotch, apple juice, lemon juice and syrup to a glass and stir. Pour into a Champagne flute and top with sparkling wine. Garnish with a rosemary sprig and a dehydrated apple slice.

Spiced Gin and Pear cocktail
Spiced Gin and Pear

Spiced Gin & Pear  
1 ½ oz. Madam Pattirini gin  
1 oz. Pear juice  
¾ oz. Spiced brown sugar syrup  
½ oz. Lemon juice 
2 oz. Prosecco  

In a shaker mix gin, pear juice, syrup and lemon juice. Pour into a chilled tumbler with ice and top with a splash of prosecco. Garnish with sprigs of thyme, pear slices, and a stick of cinnamon.

Spiced Yule cocktail
Spiced Yule

Spiced Yule
1 ½ oz. Balvenie Caribbean Cask Scotch
½ oz. Madeira
¼ oz. Tempus Fugit crème de cacao
¼ oz. Fresh lemon juice
⅛ tsp. Smoked paprika
1 ½ oz. Prosecco

Add all ingredients (except prosecco) to shaker with ice. Shake briefly and strain into a Champagne flute or coupe. Top with prosecco and garnish with a lemon twist.

Apple in a Barrel cocktail
Apple in a Barrel

Apple In A Barrel
1 oz. Apple puree
1 ½ oz. Maker’s Mark Bourbon
1 oz. Vanilla syrup
¾ oz. Lemon juice
Prosecco

Mix all the ingredients (except prosecco) and pour into the glass. Top with prosecco and garnish with a cinnamon stick and apple slice.

The mixologists at The Cape, a Thompson Hotel in Los Cabos, created this recipe.

St Agatha cocktail
St. Agatha

St. Agatha 
1 ½ oz. Martini Bianco vermouth
1 ½ oz. Martini prosecco
1 tsp. Apple cider vinegar
2 drops Saline
Orange zest
Chrysanthemum garnish 

Stir vermouth, apple cider vinegar, and saline on ice and strain into chilled Nick and Nora glass. Top with prosecco. Garnish with a chrysanthemum and express the oils of an orange peel over top of the cocktail (then discard).

Champagne Cosmo
Champagne Cosmo

Champagne Cosmo
¾ parts Absolut vodka
¾ parts Cranberry juice
¼ parts Triple Sec
¼ parts Lime juice

Add vodka, cranberry juice, triple sec and lime juice into a Champagne glass. Top with Champagne.

Mezcalita Royal
Mezcalita Royal

Mezcalita Royale 
½ oz. Mezcal
¾ oz. Cinnamon syrup
½ oz. Mango puree
3 oz. Sparkling wine 

Pour all ingredients but the sparkling wine in a shaker with ice, integrate with generous movements, stir, and serve over a rock glass with fresh ice.
