Austin Resort Offers Poptails With A Purpose

Lone Star’s 2020 Poptails

Lone Star Court, a retro-inspired resort in Austin, TX, is offering a selection of poptails, or cocktails served with popsicles. Priced at $12 each, the poptails include the tequila-based Lone Star Sunrise, the vodka-based Cherry Mint Freeze and the vodka- and liqueur-based Sour Grapes.

Created by Kolby Petrus, Lone Star’s director of food & beverage, the poptails are an adult twist on a nostalgic childhood favorite. But they’re not just a fun cocktail option for grown-up guests.

The poptails are part of the hotel’s “Poptail with a Purpose” initiative. A portion of all poptails sold benefit Partnerships for Children, a local non-profit that that offer resources, support and comfort for foster children and families in the community.

Here are the recipes for Lone Star’s 2020 Poptails.

Lone Star Poptail
Lone Star Sunrise

Lone Star Sunrise
1 ½ oz. Tequila
3 oz. Fresh orange juice
¼ oz. Grenadine
Orange popsicle

Combine the tequila and orange juice in a shaker. Shake ingredients with ice and strain into glass. Drop the grenadine from the top and add orange popsicle.

Cherry Mint Freeze poptail
Cherry Mint Freeze

Cherry Mint Freeze
1 ½ oz. Vodka
¼ oz. Lime juice
¼ oz. Grenadine
3 oz. Sprite
Mint
Cherry popsicle

Combine vodka, lime juice and grenadine and shake. Strain into glass and top with Sprite. Add fresh mint and Cherry popsicle.

Sour Grapes poptail
Sour Grapes

Sour Grapes
1 oz. Vodka
½ oz. Midori
2 oz. Sour mix
¼ oz. Raspberry liqueur
Grape popsicle

Combine the vodka, Midori and sour mix in a shaker. Shake ingredients and strain into glass. Pour raspberry liqueur into glass and add grape popsicle.
