1 ½ oz. Blue Chair Bay white rum
5 Mint leaves
½ oz. Lime juice
¾ oz. Ginger simple syrup
½ cup Honeydew puree
In a shaker, muddle mint leaves. Add rum, simple syrup, lime juice and honeydew puree. Shake mixture and pour in tall glass over ice. Top with club soda. Garnish with sprig of mint.
