What I absolutely love at the end of a challenging night is a perfect rye Manhattan with acid phosphate. Why include acid phosphate? It adds a unique acidic quality to the drink. Yes, the “twist on the classic” cocktail theme is played out, but each of these particular components makes, truly, the perfect Manhattan.
The Perfect Manhattan
3 oz. Rittenhouse Rye 100 proof, bottled in bond
½ oz. Dolin dry vermouth (white)
½ oz. Carpano Antica sweet vermouth (red)
2 shakes Boker’s bitters
3-4 shakes Acid phosphate
Combine ingredients and stir. Strain into a chilled coupe and garnish with a lemon twist, lime when you’re extra feisty.
