With St. Patrick’s Day just over a week away, it’s time to get creative with some themed drinks. (It also might be time to dust off the creme de menthe, Midori and green Chartreuse if you haven’t used them in a while.) Here’s the first round of St. Patty’s Day cocktail recipes; we’ll post more in the next week before the March 17 holiday, so feel free to send ’em if you got ’em!
The Kentucky Grasshopper
2 parts RumChata
1 part Creme de menthe
½ oz. part Bourbon
Splash heavy cream (optional)
Combine ingredients; can be enjoyed as a Martini, on the rocks, or as a sweet, layered shot.

McGillin’s Irish Potato Martini
1 ¼ oz. Sweetened coconut milk
1 ¼ oz. Whipped cream vodka
1 ¼ oz. Malibu rum
1 tsp. Coconut tossed in cinnamon sugar
Shaken and strained into a Martini glass rimmed with cinnamon sugar, sprinkle with coconut and cinnamon.

The Irish Goodbye
2 oz. Mandarine Napoléon mandarin and cognac liqueur
2 oz. Creme de menthe
2 oz. Irish Cream Liqueur
Layer each shot into a lowball glass. This drink can also be converted into a shot by reducing the amount of alcohol in equal parts.

Irish Mule
1½ parts Jameson Irish Whiskey
1 part Lemon juice
Top with Ginger beer
Build over ice, stir and serve.
