We have a rendition of an Amaretto Sour that I love to drink around this time of year. It’s called the Huckleberry Fig and made with amaretto, lemon juice, lemon grass syrup, organic egg white, and a balsamic fig brine. The brine consists of balsamic vinegar, orange and lemon zest, coriander seed, sugar, water, vanilla, black peppercorn, juniper berries, and black mission figs. An excellent cocktail for the fall.
Huckleberry Fig
2 oz. Disaronno amaretto
¾ oz. Fresh lemon juice
¼ oz. Pickled fig brine
¼ oz. Lemongrass syrup
1 Organic egg white
2 Dashes of lemon bitters
Combine ingredients in a shaker. Shake and strain into Collins glass with fresh ice. Garnish with a lemon twist and half a pickled fig.
