The artisanal movement that has exploded on the culinary side has expanded to after-dinner drinks. As bartenders have become more savvy and creative in cocktail making, cordials and liqueurs have seen a tremendous growth, according to some operators.
1 ½ oz. Caliche rum
½ oz. Lemon juice
¾ oz. Pomegranate juice (Pom Brand recommended)
½ oz. Combier orange liqueur (or any other fine triple sec)
1 dash of agave nectar (optional)
3 Sprigs of fresh thyme
Combine all ingredients over ice in a cocktail shaker, and shake vigorously until well chilled, serve in a chilled cocktail coupe, garnish with a thyme sprig.
The mixoligists at Caliche created this drink.

Drink Menus Rule As Promotion Tool
Special offers pricing and events can help drive beverage sales, but for most operators, it’s the humble drink menu that gets the job done.
A. Hardy USA, Ltd. has introduced its new VSOP Organic Cognac. The cognac features aromas of fresh pear, vanilla and roasted hazelnuts, the company says, and it is certified “Organic” by Ecocert, meaning it contains all-natural ingredients and no chemical additives. A. Hardy’s VSOP Organic Cognac is packaged in 750-ml. bottles and is 40% ABV; it is available for an average retail price of $59.99.
HandCraft Inspiration
Third generation California vintner Cheryl Indelicato has added two new wines-Inspiration White and Inspiration Red-to the HandCraft Artisan Collection portfolio. Inspiration White is a delicate, aromatic blend of sauvignon blanc, viognier, riesling, moscato and pinot grigio, and has lovely hints of bright citrus, honeysuckle and green apple, according to the company. It describes Inspiration Red as a luscious blend of syrah, zinfandel, merlot, malbec and sangiovese, with rich aromas of spice, blackberry and plum-delicious on its own or with food. The two wines are available nationally at a suggested retail price of $12.99.
