When I’m not drinking vino, I love to sip from The Blue Room’s strong selection of amaro cocktails, particularly the Son of Man. Mixologist Matthew Schrage created this cocktail, which uses Calvados, Cynar, Amaro Montenegro and Galliano, for The Blue Room in 2012. He named it after Magritte’s painting titled “The Son of Man.” I love this drink because of its complexity and use of both amaro cynar and Montenegro.
The Son of Man:
1½ oz. Morin Calvados
½ oz. Cynar
½ oz. Amaro Montenegro
½ oz. Galliano
Dashes of Bittermens Boston Bittahs
Combine ingredients in mixing glass. Stir and strain into up glass and garnish with a lemon swath.
