I’m been drinking our Fuego Tropical. The base spirit for this cocktail is Sombra Mezcal, which provides this surreal smokiness, similar to a Islay Single Malt Scotch that you wouldn’t get from tequila.
We combine this with the sweet flavors of passionfruit puree and the spiciness of the habanero shrub. The result is a beautifully balanced cocktail for all times of enjoyment.
1½ oz. Sombra mezcal
1 oz. Passionfruit puree
½ oz. Simple syrup
1 oz. Fresh lime juice
2 dashes Bittermans Hellfire Habanero shrub
Combine lime juice, simple syrup, passion fruit and mezcal into a mixing glass. Drop 2 (or more if preferred) dashes of the habanero shrub into the cocktail glass. Shake vigorously and strain into the glass. Garnish with a Thai chili.
