I can’t get enough of the Marco Polo at Eastern Standard. The Marco Polo is a light, crisp refreshing combination of house-made rhubarb vermouth, Aperol and brut rosé that nods to Europe’s aperitif culture. It’s new on our popular annual rosé-by-the-glass list this summer, and is a great way to “drink pink” in cocktail form. Really the perfect warm-weather pairing for lounging on our lively patio!
The Marco Polo
1 oz. Eastern Standard house-made rhubarb vermouth
1 oz. Aperol
2 oz. Brut rosé
Soda water
Pour vermouth and Aperol in a highball and add ice. Add wine, top with soda, and roll. Garnish with a rough orange twist.
