2 oz. Plymouth gin
1 oz. Sweetened beet puree
3/4 oz. Fresh lemon
8 Mint sprigs torn, shaken
Tear mint leaves and combine all ingredients into Boston-type shaker. Fill with 8 ice cubes and shake well. Strain into flute glass and garnish with a mint sprig.
