Lynn House, mixologist at Graham Elliot in Chicago, developed this innovative drink.
1 oz. simple syrup
2 oz. club soda
4 pints frozen Marion blackberries
3¼ cups sugar
1 pint white wine vinegar
½ lbs. fresh basil
2 pints blueberries
1 lime of zest
5 tsp. lime juice
Shrub: In a pot, mix 16 cups water with blackberries, boil, add 3 cups sugar, stir until sugar melts, reduce to a low simmer until berries have broken down. Strain and return to stove. Add basil and vinegar, and simmer for 30 min. Strain, cool and bottle. Compote: Combine 2 pints of blueberries, lime zest and ¼ cup each of sugar and water in a pan. Simmer until sugar melts. Cocktail: Combine ½ oz. lime juice, simple syrup, 1½ oz. blackberry basil shrub in mixing glass, shake until chilled and add club soda. Fill glass with ice and shape into a hill. Spoon 1 oz. blueberry compote around base of hill, and strain cocktail on top.
