This cocktail was developed by Patricia Richards, lead mixologist at Wynn Las Vegas.
11 mint leaves1 large strawberry, washed and stems removed1 oz. fresh squeezed lemon juice1 oz. rock candy syrup2 oz. Bacardi Dragon Berry Rum¼ oz. Soho Lychee Liqueur1½ oz. club soda1 sugarcane stick for garnish1 mint sprig for garnish
Muddle together the mint, strawberry and lemon juice in a mixing glass. Add the remaining ingredients and roll with cracked ice two to three times to combine. Drop into a highball glass and garnish with a sugarcane stick and a mint sprig.
