This cocktail was developed by Patricia Richards, lead mixologist at Wynn Las Vegas.
11 mint leaves
1 large strawberry, washed and stems removed
1 oz. fresh squeezed lemon juice
1 oz. rock candy syrup
2 oz. Bacardi Dragon Berry Rum
¼ oz. Soho Lychee Liqueur
1½ oz. club soda
1 sugarcane stick for garnish
1 mint sprig for garnish
Muddle together the mint, strawberry and lemon juice in a mixing glass. Add the remaining ingredients and roll with cracked ice two to three times to combine. Drop into a highball glass and garnish with a sugarcane stick and a mint sprig.
